Spring Greens: Easy Recipes using Seasonal Vegetables

Here in the UK, the clocks have finally changed, meaning we’re officially in British Summer Time. Summer is still far off, but we’re excited to have a spring in our step despite the unpredictable weather!

This week, we’re talking all things spring greens, letting you know what plants and produce that will be in season and how to use these in your food.

Here’s a list of veggies that are in season this time of year (until June) in the UK (via BDA). Look out for these in the supermarket; it’s a great way to support local farmers and reduce your environmental impact to eat and shop local.

Midweek dinner in the garden: Green Vegetable & Feta Pie

For a light but luxurious midweek dinner, this tasty pie uses spring greens with lots of herbs and cheesy goodness to create a fresh but filling meal. A great way to get in lots of greens without even noticing!

If you’re looking for something a little more complex to make, this is great and so worth all the work. More luxurious but still as comforting, the artichoke and black truffle are not everyday ingredients but they add something special, perfect for an occasion.

If sandwiches are not cutting it for you anymore, try this warming soup for lunch. It's fresh yet creamy and a great way to batch make your lunches whether you’re WFH or heading to the office. Just make sure your container is airtight!

Quick noodle night: Spring Green Udon Noodles

If you want a quick meal, noodles are always a good idea. These are super nutritious and you can make them as spicy as you like and add any other veg you want to garnish (cucumber, radish, spring onion).
