3 Delicious Strawberry Recipes for Summer

It's Wimbledon week here in the UK which can only mean one thing: Strawberries and cream. Whether you're hosting a Wimbledon viewing party or going to a picnic, we've found 3 recipes with strawberries as the main character so that you can make the most of them whilst they're in season!

1. Strawberry Milk Latte

If baking isn't your thing, a great way to get creative with strawbeerries is with summer beverages. Add a bit of colour and fruity-ness to your iced latte with this recipe by Coffee Bae. Watch the satisfying reel of it here.

Ingredients:

5-6 strawberries

6 oz Oat milk

2 tsp coconut sugar

2 oz espresso and ice

Equipment:

Muddler

Small bowl

Nice glass tumbler


2. Strawberries & Cream Layer Cake

If you've got an event or birthday this summer and want to whip up something really impressive - this strawberry layer cake is such a crowd pleaser. If you want to take it one step further, you can make your own homemade strawberry jam for it too.

Ingredients:

300g of self raising flour

125g of unsalted butter,

275gof caster sugar

3 large eggs

125ml whole milk

75g of clotted cream

1/2 tsp of baking powder, 1 tsp of vanilla paste

Filling: 500g of double cream, strawberry jam, 1tsp of vanilla paste, 2 punnets of strawberries, and 50g of icing sugar (and some for dusting).

Recipe from the Bake Off All Seasons Book. Follow a standard sponge cake method and assemble the layers with cream, jam and sliced strawberries. Be sure to leave a dip in the middle of your cream layers for the jam so that it doesn't leak everywhere and keep it refridgerated on hot days!


Ever heard of a galette? It's a French free-form pie that can be either sweet or savoury - kind of like a tart. They're meant to look rustic and imperfect so it's an easy one to put together for a Wimbledon themed gathering! This recipe uses basil and lemon for extra summer freshness.

Pastry ingredients:

1 cup pastry flour, substitute all purpose flour

2 tablespoons granulated sugar

¼ teaspoon of salt

¼ cup unsalted butter, cold

1 egg, beaten for egg wash

 

Filling:

2 cups fresh strawberries, sliced

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

2 teaspoons lemon zest

2 tablespoons fresh basil
